Our featured choice is the 1kg joint: a generous dinner for four. Serving guidance allows approximately 250g of uncooked, trimmed beef per person, alongside your accompaniments.

Two ways to make an occasion of it

The Christmas roast: brown the outside, finish in the oven and use a temperature probe to judge the centre. Allow time to rest before carving. Serve with roast potatoes, seasonal vegetables and your favourite sauce.

Your own Wellington: choose a recipe suited to the weight of your joint and allow time for its preparation and chilling stages. Let us know you are making Wellington so we can advise on the shape of the joint.
